Harvest Bowl

Yields: 2 bowls

Time: 30 min

Ingredients

Half cup dry quinoa

1 yellow tomato- diced

1 apple - diced

1 avocado- diced

1 sweet potato- peeled and diced

Honey Dijon Dressing

Almond and dried cranberries

The Good Shit seasoning or equivalent

Cinnamon

Salt & Pepper

Olive oil

Instructions

  1. Preheat oven to 400 degrees

  2. Combine 1/2 cup dry quinoa with 1 cup of water and bring to a boil. Once boiling reduce heat to low and cover. Let simmer for 15 min.

  3. Prepare potatoes. Peel and dice sweet potato. Place on a baking sheet with foil. Drizzle with olive oil. Season with salt and pepper, Good Shit and cinnamon (don’t over do it with the cinnamon). Mix potatoes until coated.

  4. Place potatoes in oven and bake for 20 min.

  5. Once quinoa is cooked, divide into two bowls.

  6. Dice all other ingredients and divide into two bowls on top of quinoa.

  7. Once potatoes are done, let sit to cool and then add to bowl.

  8. Top with almonds and cranberries and as much dressing as you like.
