Mark’s Beef Stir Fry

Yields: 4 servings

Total Time: 30 minutes

Ingredients:

  • 1 lb flank steak, sliced into 1–2 inch strips

  • 4 stalks celery, sliced into 1/2-inch pieces

  • 3 cloves garlic, minced

  • 1/4 tsp sugar

  • 2 tsp cornstarch

  • 2 tbsp low-sodium soy sauce

  • 2 1/2 tbsp peanut oil, divided

  • Salt and pepper, to taste

  • 1 cup cooked white rice

Instructions:

  1. Marinate the Beef:
    In a bowl, combine the sliced flank steak with soy sauce, 1 tablespoon of peanut oil, sugar, and cornstarch. Mix well and set aside to marinate while preparing other ingredients.

  2. Cook the Celery:
    Heat 1 tablespoon of peanut oil in a wok over high heat. Add the celery and stir-fry for 2 minutes. Sprinkle with a pinch of salt and add 2 tablespoons of water. Stir briefly, then remove from heat and set aside.

  3. Sauté the Garlic:
    Reduce heat to medium. Add the remaining 1/2 tablespoon of oil to the wok. Add the garlic and cook for about 30 seconds until fragrant and golden, being careful not to burn it.

  4. Stir-Fry the Beef:
    Increase heat to medium-high. Add the marinated beef to the wok and stir-fry quickly, browning the meat for about 5 minutes.

  5. Simmer and Combine:
    Lower the heat to medium-low and continue to stir-fry until the beef is cooked through and a light sauce forms.

  6. Finish and Serve:
    Return the cooked celery to the wok, toss to combine, and heat through. Serve hot over cooked white rice.
