Slow Cooker Honey Garlic Chicken

Slow Cooker Honey Garlic Chicken Thighs

Yields: 4 servings

Total Time: 3.5 to 6 hours

Ingredients:

  • 4 boneless, skinless chicken thighs

  • 1/4 cup low-sodium soy sauce

  • 1/2 cup low-sodium, low-sugar ketchup

  • 1/3 cup honey

  • 4 cloves garlic, minced

  • 1 tsp dried basil

  • 1 tbsp Good Shit seasoning (or your favorite all-purpose seasoning blend)

  • Salt and pepper, to taste

  • 1/2 tsp red pepper flakes

  • 1/2 tsp ground ginger

  • 1 cup cooked white rice, for serving

Instructions:

  1. Prep the Chicken:
    Place chicken thighs in an even layer at the bottom of the slow cooker. Season with Good Shit, salt, pepper, ground ginger, and red pepper flakes.

  2. Make the Sauce:
    In a small bowl or measuring cup, whisk together soy sauce, ketchup, honey, minced garlic, and dried basil.

  3. Add Sauce:
    Pour the sauce evenly over the seasoned chicken in the slow cooker.

  4. Cook:
    Cover and cook on low for 6 hours or on high for 3.5 hours.

  5. Baste:
    About halfway through cooking, spoon some of the sauce over the chicken to keep it moist and flavorful.

  6. Shred the Chicken:
    With 20–25 minutes left, use two forks to shred the chicken directly in the slow cooker. Stir well to coat with sauce.

  7. Prepare the Rice:
    While the chicken finishes cooking, prepare the white rice according to package instructions.

  8. Serve:
    Serve the shredded honey garlic chicken over a bed of rice, spooning extra sauce over the top as desired.
